Fragrant Clear Chicken Soup

Serves: 6

Ingredients:

Chicken Bones:  250 gms

Celery, leaves and tender stalks: A fistful

Lemon Grass, cut into large pieces: A fistful

Garlic: 4-5 medium sized Cloves, peeled and cut

Garlic: 2 inch piece, peeled and cut

Whole Peppercorn: 10-12

Salt, to taste.

Water: 4-5 cups

Ingredients in the Pressure Cooker, just before cooking.

Method:

Wash and clean the Chicken bones well

Roughly rip the Celery and Lemon Grass

In a Pressure Cooker add all the ingredients together

Cook giving 4-5 whistles, on a medium flame

Take the lid off and let boil for 5-10 minutes.

Strain completely

Serve hot.

For the Vegetarian Version: Substitute Chicken with cubes of carrot and potato.

A bowl of steaming Chicken Soup is the cure for almost anything. Easy to make and wholesome to eat, this soup is everybody’s favourite. Everyone has their version of it and my friend Ensiya shared hers with me. The addition of Celery and Lemon Grass adds fragrance to it and is great when you’re down with a cold.

Ingredients

    Lemongrass is the real game changer here. The aroma and taste of lemongrass and celery, both will impart unique character to the soup for sure. Will definitely turn out to be a winning star of the meal course!

    Sounds delicious. I make a similar version, with coriander, and a bit of carrots and beans. Sometimes I add a teaspoon of barley.

    Its difficult for me to get lemon grass and celery. But, I’ll try this one when those veggies are available.

    I am not a soup fan, but during cold or migrains take refuge on soups. Somehow they get comforting only when in pain 😉
    This clear is actually clear, unlike how we see out in resturants. Saving this for future Mayuri
