Healthy Ice Cream

 
Serves 2
  
Ingredients
2 ripe medium sized Bananas (use 3-4 if using the small Elaichi Bananas)
1 medium sized ripe Mango, peeled, deseeded and pulped
Pomegranate Seeds (Optional)
 
Method
Peel and slice the bananas into rounds.
Wrap tightly in cling wrap and freeze for a minimum of 6 hours (overnight works better)
In a blender add the frozen banana slices and mango pulp and blend together until smooth
In an airtight container (I used Tupperware)freeze this mixture for 15 -20 minutes, or until it sets
Scoop out and garnish with pomegranate seeds
 
 
Notes:
Slightly over ripe Bananas make for a tastier ice cream
Use just the Banana for the base of your ice cream, experimenting by adding fruits/nuts/flavorings of your choice (like i’ve added Mango here)
If your banana is not naturally sweet, add honey
You could add chocolate syrup/Nutella/Rooh Afza/Fruit syrups..ah the list is endless!:)
For a slighty ‘sophisticated’ taste, soak raisins in rum for an hour or two and add them to it after pureeing the banana.
It’s a great treat for kids, and an occasional one for those on a diet.
