Leftover Roti/Paratha Poha

Leftover Roti/Paratha: 2
Pinch of Rye
Pinch of Jeera
1/2 of an Onion, finely chopped
1/2 of a Tomato, finely chopped
1/2 of a Green Chilly, finely chopped
1 Tsp Oil
1 Tsp Peanuts
A few Curry Leaves
Salt, Haldi Powder, Red Chilly Powder, Dhania (Coriander) Powder,  to taste
A squeeze of Lime
Chopped Coriander leaves, for garnishing
Coarsely grind the roti/paratha in a mixie
In a non-stick pan, heat the oil
Add rye-jeera and allow to splutter
Add the peanuts, curry leaves and chillies and sauté for a bit
Add the tomatoes and onion and sauté till the tomatoes start softening
Now add the dry masalas and cook for a bit
Add the ground rotis/parathas and mix well
Cover and cook for 3-5 minutes, sprinkling water if you feel it is too dry.
Switch off the flame. 
Squeeze the lime over it. Mix.
Garnish with chopped coriander leaves
Serve hot.
