Eggless Stuffed Mini Pancakes made in Paniyaram/Appe/Paddu Pan
This dish was inspired by the original recipe by Radha Natrajan S
Makes 14 Pancakes
1 Cup Maida
1/2 Tsp Baking Powder
1/2 Tbsp Sugar
1/4 th Tsp salt
1/4 th Cup Yogurt
1 Cup Buttermilk
2 Tbsp Butter, melted
For the filling/stuffing
Jam of your choice/ Coarsely chopped Chocolate bits/ Peanut Butter
Powdered Sugar, for dusting
In a bowl mix together all the ingredients for the pancake batter
Gently beat the mixture with a fork to smoothen out lumps, if any.
Grease the wells of your Appe pan with 1 drop of Oil each.
Pour 1 Tsp of batter in each well, place your filing in the centre of the batter, and top with another 1 Tsp of batter.
Cover the pan and let cook on a low flame, till the pancakes start changing colour.
Flip over to the other side and let that cook till done.
When done, remove from pan and let them cool
Dust with icing sugar before serving
