Mango Halwa

2 Tbsps Sooji
1 Tbsp Ghee
1 glass Water
1 small Mango, peeled, diced and pulped (the less fibrous and more sweeter the mango, the tastier your halwa)
Sugar/Honey, to taste {I used Khand(raw sugar)}

Heat the water.
In a heavy bottomed pan heat the ghee.
Add the sooji to it and fry well till it starts changing colour and emits an aroma.
At this stage, add the hot water to the sooji, stirring continuously, till the water is absorbed.
The sooji will now start swelling up and thickening.
Now add the sugar, stirring all the while.
After 3-4 minutes add the Mango Pulp and keep stirring till it is completely incorporated into the sooji.
Let it cook for another 5-6 minutes, or until the mixture starts leaving the sides of the pan.
Switch off gas.
Garnish with sliced almonds.
