Freshly grated Coconut: 1 cup
Sugar: 3/4th Cup
Water: 1/4th Cup
Heat a heavy bottomed pan, add the sugar and water and mix well till the sugar dissolves and starts bubbling.
Keep stirring till the sugar syrup starts thickening and reaches a 1 string consistency (If you take a drop between your thumb and index finger you can see a single string forming)
When it does, add the grated coconut, mix well and keep stirring.
After 3-5 minutes, the mixture will start thickening.
Keep stirring till the mixture starts leaving the sides of the pan.
Switch off the flame and immediately transfer it to a greased plate/tray.
Cut while still warm.
Cool, and store in an airtight container.
1/2 a Tsp of Cardamom Powder could be added to this too.
Cashewnuts/Almond/Raisins are another option.
Adding 2 Tsp’s of Ghee will make the Barfi richer and softer. You could add the ghee along with the coconut.
