Ingredients:
Freshly grated Coconut: 1 cup
Sugar: 3/4th Cup
Water: 1/4th Cup
Milk: 2 Tbsps
Method:
Heat a heavy-bottomed pan, add the sugar and water and mix well till the sugar dissolves and starts bubbling.
Keep stirring till the sugar syrup starts thickening and reaches a 1-string consistency (If you take a drop between your thumb and index finger you can see a single string forming)
When it does, add the grated coconut, mix well and keep stirring.
After 3-5 minutes, the mixture will start thickening.
Add the milk to it now.
Keep stirring till the mixture starts leaving the sides of the pan.
Switch off the flame and immediately transfer it to a greased plate/tray.
Cut while still warm.
Cool, and store in an airtight container.
Note:
1/2 a Tsp of Cardamom Powder could be added to this too.
Cashewnuts/Almond/Raisins are another option.
Adding 2 Tsp’s of Ghee will make the Barfi richer and softer. You could add the ghee along with the coconut.
