Beetroot Pulao

This nutritious and delicious  Beetroot Pulao is one of my favourite things to eat for a solo meal. It is an eye catching dish on the table at a party. People who claim to ‘hate beetroot’ have loved it too! No, it does not have ‘the unpleasant taste or odour of beetroot either’ 🙂
 
Serves 1
 
Ingredients:
1/2 Cup Rice, cooked
1/2 of a medium sized Beetroot, peeled and finely grated
1 medium sized Onion, finely sliced, length wise
1/2 Tsp Ginger, very finely chopped or grated
1/2 Tsp Green Chilly, very  finely chopped
1 heaped Tbsp plain Curd
 
1 Tbsp Oil
1/4th Tsp Cumin/Jeera
1/4th Tsp Mustard/Rye
 
Turmeric Powder, Red Chilly Powder, Garam Masala and Salt, all to taste.
 
1 Tsp Ghee
A squeeze of Lemon juice
 
Method:
Heat the Oil in a heavy bottomed pan
Add the Cumin and Mustard seeds and stir till they pop
Now add the sliced Onions and sauté
To this add the Chillies and Ginger and sauté till the Onions start turning brown
Add the grated Beetroot and mix well together
Sprinkle the Turmeric and Red chilly powder, saute for a bit and add the Curd, mixing it well
Keep stirring for 2-3 minutes
Add the cooked Rice and mix gently, coating the rice with the beetroot paste
Cover and cook for 3-4 minutes
 Add the garam masala, salt and ghee
Mix well and let it cook for a few minutes
Switch off the flame, add a squeeze of lime
Garnish with chopped coriander
 
Serve with Raita and Papad.

Ingredients
  • ½ Cup Rice, cooked
