Beetroot Pulao

Ingredients
  • ½ Cup Rice, cooked
  • ½ of a medium sized Beetroot, peeled and finely grated
  • 1 medium sized Onion, finely sliced, length wise
  • ½ Tsp Ginger, very finely chopped or grated
  • ½ Tsp Green Chilly, very  finely chopped
  • 1 heaped Tbsp plain Curd
  • 1 Tbsp Oil
  • ¼th Tsp Cumin/Jeera
  • ¼th Tsp Mustard/Rye
  • Turmeric Powder, Red Chilly Powder, Garam Masala and Salt, all to taste.
  • 1 Tsp Ghee
  • A squeeze of Lemon juice
Instructions
  1. Heat the Oil in a heavy bottomed pan
  2. Add the Cumin and Mustard seeds and stir till they pop
  3. Now add the sliced Onions and sauté
  4. To this add the Chillies and Ginger and sauté till the Onions start turning brown
  5. Add the grated Beetroot and mix well together
  6. Sprinkle the Turmeric and Red chilly powder, saute for a bit and add the Curd, mixing it well
  7. Keep stirring for 2-3 minutes
  8. Add the cooked Rice and mix gently, coating the rice with the beetroot paste
  9. Cover and cook for 3-4 minutes
  10. Add the garam masala, salt and ghee
  11. Mix well and let it cook for a few minutes
  12. Switch off the flame, add a squeeze of lime
  13. Garnish with chopped coriander
  14. Serve with Raita and Papad.
