Delicious Doodhi Soup
Doodhi or Bottle Gourd is nobody’s favorite, till you have it in this form. The creamy taste and comforting consistency of this soup will have people wondering what the main ingredient in there is. Shhhhh! Keep them guessing!
Ingredients:
1 medium-sized Doodhi, peeled and cut into large pieces
1 large Onion, peeled and cut into large pieces
5-6 pods of Garlic, peeled
2-3 Tbsp Milk (optional)
1 Tsp Oil
Pepper and Salt, to taste
Chilly Flakes or herbs of choice (optional)

Method:
In a pressure cooker heat the oil
Add the Onion and Garlic and sauté till transparent
Add the chopped doodhi and stir together for 2-3 minutes
Pressure cook the Doodhi,Onion and garlic together till done (about 2-4 whistles)
When cooked, let cool
Blend together using a mixie, till it forms a smooth and thick mix, adding water if required according to your desired consistency
Switch on the flame and stir until the soup starts bubbling
Slowly add the milk, mixing continuously else the milk will curdle
Stir for 5 more minutes and switch off the flame
Season with Salt and Pepper and Chilly flakes or herbs of choice
Can be eaten either hot or cold.
