medium-sized potatoes, boiled, skinned and diced
½ Tbsp Oil
Tsp Rye
Tsp Chana Dal
Tsp Urad Dal
a very generous sprinkle
green Chillies, slit
dry Red Chillies, chopped fine
medium sized Onion, chopped fine
few curry leaves
Masala’s: Salt, Turmeric Powder, Red Chilly Powder, Chat Masala, as per taste
a non-stick pan, heat the oil. Add the hing, rye, chana dal and urad dal. Stir
till the rye splutters and the dals change color.
the onion, curry leaves, green and red chillies and sauté till the onions turn
transparent.
the dry masalas and mix well for 2-3 minutes.
2-3 tbsps of water to the above mix and cook for another 2-3 minutes.
the potatoes; mix well and cover and cook, stirring in between, for the next
5-6 minutes.
with chopped coriander and serve hot.
