Chilly Flakes or herbs of choice (optional)
- 1 medium-sized Doodhi, peeled and cut into large pieces
- 1 large Onion, peeled and cut into large pieces
- 5-6 pods of Garlic, peeled
- 2-3 Tbsp Milk (optional)
- 1 Tsp Oil
- Pepper and Salt, to taste
- Chilly Flakes or herbs of choice (optional)
- In a pressure cooker heat the oil
- Add the Onion and Garlic and sauté till transparent
- Add the chopped doodhi and stir together for 2-3 minutes
- Pressure cook the Doodhi,Onion and garlic together till done (about 2-4 whistles)
- When cooked, let cool
- Blend together using a mixie, till it forms a smooth and thick mix, adding water if required according to your desired consistency
- Switch on the flame and stir until the soup starts bubbling
- Slowly add the milk, mixing continuously else the milk will curdle
- Stir for 5 more minutes and switch off the flame
- Season with Salt and Pepper and Chilly flakes or herbs of choice
- Can be eaten either hot or cold.
This sounds super yum and very easy to make, M. The milk is something I haven’t tried adding to my dudhi soup yet. Going to make this soon!
