Akuri : Spicy, scrambled eggs, Parsi-style with Pao

 
Serves 1
 
Ingredients
2 eggs
1 small onion, chopped very fine
1 small tomato, chopped fine (keep aside a little for the garnish)
Turmeric Powder, a generous pinch
Ginger-garlic paste, ½ tsp
Green chilles, 2 medium sized, chopped very fine
Milk, 2 tbsps
Pepper and salt, to taste
Butter/Ghee, ½ tsp
Oil, 1 tbsp
Coriander, chopped fine (for the garnish)
 
Method
Beat the eggs well.
In a nonstick pan heat the oil, add the onions and ginger-garlic paste and fry, on a medium flame, till they start
changing color.
Now add the tomatoes, chilies and turmeric powder and fry some more. 
Add the butter/ghee and fry on a low flame.
Add milk, pepper and salt to the beaten eggs, beat well. And this to the fried onion mix.
Let it start cooking before you scramble the eggs.
Cook until done.
Garnish with chopped onions and coriander and serve with Pao/Toast.
