Green Apple and Mango Ginger Chutney

This recipe serves 2 and can be refrigerated for 5-6 days Have it with Rice, Stuffed Parathas, on a slice of toast. Or however you would like to.
Ingredients

  • 2 Green Apples
  • 3 inch piece of Mango Ginger
  • Or
  • 2 inch piece of regular Ginger
  • 2 Tsp Oil
  • 3 dry Red Chilles
  • ½ Spoon Cumin / Jeera
  • ½ Spoon Mustard Seeds / Rye
  • 1-2 sprigs of Curry Leaves / Kadipata
  • Salt
  • Turmeric
  • Red Chilli Powder

Instructions
  1. Method:
  2. ) Wash the Green Apples thoroughly. Core them. Grate them with skin on.
  3. (Do this step last, after all your ingredients are in place, as the apples oxidize change color very fast)
  4. ) Peel and grate the Ginger.
  5. ) Heat Oil in a pan ( I used a non-stick pan)
  6. ) Add the Cumin and Mustard Seeds and wait for them to pop.
  7. ) Roughly rip the Dry Red Chilles and Curry Leaves and add them too.
  8. ) Follow up with the grated Ginger and saute it till it loses its raw texture.
  9. ) Add the grated Apples ( if you have juice that the apples have let out while grating add that too)
  10. ) Mix well , keeping the flame medium.
  11. ) Add the Salt, Turmeric and Red Chilli Powder and mix well.
  12. ) Cook till the apples soften and the water evaporates.
  13. Done!
