Green Apple and Mango Ginger Chutney

- Ingredients:
- 2 Green Apples
- 3 inch piece of Mango Ginger
- Or
- 2 inch piece of regular Ginger
- 2 Tsp Oil
- 3 dry Red Chilles
- ½ Spoon Cumin / Jeera
- ½ Spoon Mustard Seeds / Rye
- 1-2 sprigs of Curry Leaves / Kadipata
- Salt
- Turmeric
- Red Chilli Powder

- Method:
- ) Wash the Green Apples thoroughly. Core them. Grate them with skin on.
- (Do this step last, after all your ingredients are in place, as the apples oxidize change color very fast)
- ) Peel and grate the Ginger.
- ) Heat Oil in a pan ( I used a non-stick pan)
- ) Add the Cumin and Mustard Seeds and wait for them to pop.
- ) Roughly rip the Dry Red Chilles and Curry Leaves and add them too.
- ) Follow up with the grated Ginger and saute it till it loses its raw texture.
- ) Add the grated Apples ( if you have juice that the apples have let out while grating add that too)
- ) Mix well , keeping the flame medium.
- ) Add the Salt, Turmeric and Red Chilli Powder and mix well.
- ) Cook till the apples soften and the water evaporates.
