This is a Pasta with a difference. The White Sauce made is healthy (minus the cheese) as it uses Whole Wheat Flour, instead of All Purpose Flour / Maida and Olive Oil instead of Butter. Healthier Sauce, no difference in taste.
  • For the White Sauce
  • Milk, 2 Cups
  • Wheat Flour, 2 Tbsp
  • Olive Oil, 1 Tbsp
  • Salt, Pepper and Oregano, to taste
  • 1 Cube of Cheese (optional)
  1. Of the 2 cups, take ½ a cup of milk.
  2. Add the flour to it and mix until smooth and lump free.
  3. Add this to the remaining milk and mix well together
  4. In a heavy bottomed pan heat the olive oil
  5. To this add the milk mixed with the flour slowly, stirring continuously as you do
  6. On a low flame keep stirring this till the sauce starts thickening
  7. When it reaches your desired consistency, switch off the flame, add the salt, pepper, oregano and cheese.
  8. Mix well and set aside to cool.
  9. I cooked my Wheat Pasta Al Dente, with some salt and oil in the water I used to boil it in
  10. The vegetables that went into the pasta, Carrots, Capsicum, Jalapeños, Onions and Garlic, were sautéed in Olive Oil, with a sprinkling of herbs and salt
  11. For the Herbed Garlic Butter
  12. Salted Butter, 2 Tbsp (at room temperature)
  13. Very Finely Chopped Garlic, ¾th Tbsp
  14. Oregano (or herb of your choice), ½ Tbsp
  15. Fold in the garlic and herbs into the butter
  16. Mix well
  17. Set aside for half an hour before use
  18. Honey-Mustard Dressing for the Salad
  19. The quantity used for the dressing will be according to the serving size and the ingredients you use for the salad.
  20. Below is a rough estimation;
  21. Mustard, 1 heaped Tbsp
  22. Honey,1/2 Tsp
  23. Olive Oil, 1 Tsp
  24. Salt and Pepper, to taste
  25. Mix together all the ingredients and keep aside for 10 minutes
  26. Use to dress the salad just before serving
  27. For my salad I used finely chopped Lettuce, Tomatoes, Baby Tomatoes, Onions, Carrots, Jalapeños and Mixed Sprouts.
