7 Cup Barfi #RecipePost

Posted on 21st November 202221st November 2022 by Mayuri
This sweet is known as the 7-cup Barfi as all the ingredients used total up to 7 cups.
There are multiple recipes for this sweet on the internet, with different ingredients. I have tried a few myself.
This particular recipe was shared by my fellow blogger Kala and is by far the easiest, quickest, and most delicious one I have made.
This recipe uses all the ingredients I always have at home, is quick to rustle up and texture ensures that it just melts in your mouth!

Ingredients:
1 Cup Besan /Gram Flour
1 Cup Cashewnut Powder
1 Cup Milk (warm)
2.5 Cups Sugar
1.5 Cups Ghee (melted)
*You can take any Cup/Mug/Glass/Katori for this, depending on the quantity of Barfi you need. Use the same vessel of choice to measure all ingredients.
*I use 2 Cups of Sugar and that works for me.

Method:
1) Keep a greased tray ready, to set the Barfi in.
2) Add all the ingredients to a heavy-bottomed vessel and mix well.
3) Alternating the flame between low and medium, keep stirring this mix till it starts thickening.
4) Just as it starts leaving the sides of the pan switch off the flame and pour it into the greased tray.
*This step is important. Don’t wait for it to form a mass, as if you cook it for too long the texture won’t be right.
5) Tap the tray a couple of times to even the Barfi mixture.
6) Cut when still warm and allow cooling completely.
7) Store in an airtight jar.
