Pav Bhaji

Peel 3 large potatoes and cut into 2.
Take 1/2 of a medium sized cauliflower and cut into large flowerets .
Wash thoroughly, add enough water to cover, along with 1/2 a tsp of haldi powder and salt to taste and pressure cook giving 3 whistles. When done, drain the water and keep aside. Mash together the potato and cauliflower and keep aside.

 

Grind together 7-8 medium sized flakes of garlic,  4-5 dry red chillies/1 1/2  tsp chilly powder, salt and a little water. Make a paste.
In oil add 1 large finely chopped onion, 1 finely chopped Capsicum and fry till onion start browning. To this add 1 large finely chopped tomato and the chilly-garlic paste.

 After 5 minutes of frying, add salt and Pav Bhaji Masala ( I use Badshah Mumbai Pav Bhaji Masala)
Fry until oil starts leaving the masala.

To this add the boiled and well mashed potatoes and cauliflower. If too thick, add water.

 Let simmer till it starts boiling, adding pav bhaji masala and salt to taste.
Squeeze in half a lemon, stir, shut flame.
Garnish with finely chopped onions and coriander and serve with Pav.
